China Poblano, the restaurant inside the Cosmopolitan of Las Vegas, is offering a special Day of the Dead menu from October 26 to November 8, and its most commemorative dish is a Chinese dish created in memory of the late Chinese chef Steven Chen. According to a report published October 26, the dish, called 'Combination No. 2,' is a spicy variation on kung pao chicken that Chen created during his lifetime; he had been a member of the restaurant's kitchen team since 2010 and helped shape the Chinese menu of the Chinese-Mexican restaurant founded by celebrity chef Jose Andres.

Day of the Dead (Dia de los Muertos) is Mexico's traditional festival honoring the deceased, when families build altars with photographs, flowers, food and offerings. This year China Poblano's observance includes the tribute to Chen.
