Never Pour Water on a Grease Fire: Remember Cover, Off, Out

A flaming pan is one of the most common kitchen emergencies. U.S. fire-safety guidance is clear: never pour water on a grease fire — water hitting hot oil erupts and spreads the flames. Remember three steps instead: Cover — slide a lid or baking sheet over the pan from the side to cut off the air; Off — turn off the burner only if you can reach it safely; Out — if the fire does not die down, leave at once, close the door behind you, and call 911 from outside. A few more rules: never carry a burning pan around; never throw flour on it (it can flash); baking soda works only on a very small flame. Keep a kitchen-rated extinguisher a few steps from the stove, where you can grab it without reaching over the fire. And the golden rule: only fight a fire that is still small — when in doubt, get people out first and call for help.
